This batch makes 24 modest size tacos. Because of the consistency of the "meat" it is more like a burrito than a taco, hence the name taco burrito. Essentially I use a lot of canned diced tomatoes, onions, garlic, and very lean ground beef to make a nice lean taco with lots of veggies cooked into it. DRAINED. * Onions, raw, 1 cup, chopped/diced * Garlic, .5 cup A TON OF GARLIC * Two packages of taco seasoning. * Mission Flour Tortillas, Soft Taco, 8 inch, 24 serving or two packages of 12. * *Colby and Monterey Jack Cheese shredded, 2 cups * Spinach, fresh, a good bag of it. How Do I Make Taco Burritos?Here is how you make Taco Burritos: Makes 24 tacos. You need one large pot with a lid to make this recipe. Chop/dice onions and mince your garlic. Put them in the pot with a bit of margarine or olive oil and brown them. Then add your meat and brown it slowly adding one package of your taco seasoning. Add your drained diced canned tomatoes, and over them add the other taco seasoning packet. Brown your meat and bring the whole concoction to a good hot temperature. 150 degrees. Drain off the excess water and or fat using a colander or the lid of the pot. Serve on the tortilla's (slightly warmed) with a dash of cheese and plenty of spinach. I like them with salsa, hot sauce or even ketchup. Num!
