16 oz. Gluten Free pasta (I use Ronzoni)
1 pound ground pork
4 TBS butter
1 cup chopped onion
8 oz. canned green chiles, drained
1 taco packet seasoning (I use a homemade mix that is low sodium)
1/4 cup corn starch
4 cups whole milk
8 oz. shredded cheddar, divided (I use a blend of sharp and medium cheddar)
8 oz. shredded colby jack cheese
3 oz. crushed corn tortillas chips (like restaurant style)



How Do I Make Taco Chile Mac?

Here is how you make Taco Chile Mac:

1) Boil water for pasta. When water is boiling, only cook pasta for the minimal time listed on package and then drain. Preheat oven to 375 degrees F.2) In the meantime, brown pork in a skillet. Remove meat from skillet and reserve.3) In the same skillet, saute onions and chiles in butter. When soft, sprinkle with corn starch, stirring until absorbed. Add taco seasoning.4) Very slowly add milk in small increments, completely incorporating each addition into skillet mixture before adding next addition of milk. Stir constantly.5) Reserve 1 cup of cheddar cheese for topping to the side. Stir this cheese with the crushed tortilla chips and hold until the very end.6) With the remaining cheese, stir into skillet mixture, stirring constantly.7) Stir cheese sauce mixture into cooked pasta. Pour into a greased 9X13 pan. Top with reserved cheese and tortilla chip mixture.8) Cover with foil. Bake for 20 minutes, covered, at 375 degrees F, then uncover and bake another 20 minutes.
