What Are The Ingredients For Veggier Tacos Recipe?

The ingredients for Veggier Tacos are:

1/2 lb. of EXTRA LEAN (96%) Ground Beef
1 Can Petite Diced Tomatoes w/ Jalapenos
1 Cup Matchstick Carrots
1/2 medium white onion
1/4 of a Bell Pepper
1/4 of a Red Pepper
1/4 of a Yellow Pepper
1 TBSP minced garlic
1 can LOW SODIUM beef broth

Seasonings:
1 TBSP Paprika
1 TBSP Chili Powder
1/2 TBSP Onion Powder
a few dashes Garlic Pepper
a dash or two or three of Cholula Hot Sauce

Don't Forget:
Taco Shells
1 cup Colby Jack & Monterey Cheese

-Salsa
-Low-Fat Sour Cream

How Do I Make Veggier Tacos?

Here is how you make Veggier Tacos:

*For this recipe, I highly recommend a food processor. Mincing all those veggies into tiny, little pieces can be ... tedious. * also, I recommend adding the seasonings to taste instead of following a hardcore guideline. The measurements I've added here are just an estimate of what I generally use. 1. place extra lean ground beef in a large frying pan and fry, adding the seasonings (onion powder, chili powder, paprika, pepper). 2. while the beef is frying, place all veggies (carrot, peppers, garlic, onion) into a food processor until finely minced. 3. when the beef is browned well, add the beef broth and can of diced tomatoes. Continue to cook on medium.4. add your minced veggies to the beef & broth and stir. The mixture should be boiling.5. boil the mixture until the veggies start cooking down and the mixture thickens. How long you cook it depends on how you'd like the texture. I like to cook mine down until everything's really tender and most of the liquid is gone.6. use a toaster oven to toast your shells and then spoon the mixture into the taco shells. Top with your choice of toppings--just be mindful of the extra calories you're adding. This recipe makes about 8 or so tacos, depending on how much meat you put in them, size of tacos, etc. Number of Servings: 8Recipe submitted by SparkPeople user ARTIZAN.
