1 c. peeled and shredded carrot (about 1 large)
12 taco shells
1 151/2 oz. can black beans, rinsed and drained
1 c. salsa
2 t. cumin
1 t. chili powder
1/2 t. garlic posder
Optional toppings - avocado, tomato, shredded lettuce, etc.

Here is how you make Have-it-Your-Way Tacos:

Heat oven to 350. Heat large non-stick skillet over medium-high - add meat and carrot and cook until meat is no longer pink and drain off fat. Bake taco shells according to package. Add beans, cheese, salsa, cumin, chili powder and garlic to cooked meat and carrot. Cook for a couple minutes until the cheese is melted.
