• 1/2 pound ground pork
• 1 1/2 Tbsp Cornstarch
• 2 Tbsp soy sauce
Other:
• 1 pound regular tofu (medium firmness)
• 3 green onions
• 1/4 tsp salt
• 1 tsp fermented black bean paste
• 1 Tbsp tobanjan (hot bean paste)
• 3 Tbsp stock (chicken broth)
• 1 Tbsp cornstarch
• 2 Tbsp water
• 2 Tbsp soy sauce
• Freshly ground Szechuan pepper
• 2 - 3 Tbsp oil for stir-frying, as needed


How Do I Make Mabo Tofu?

Here is how you make Mabo Tofu:

1. Mix marinade pork for about 20 minutes. 2. Cut the tofu into 1/2 inch (1 cm) square cubes, and blanch for 2 - 3 minutes. Remove from boiling water and drain.3. Chop green onions into short lengths.4. Heat wok and add oil. 5. Add the marinated pork. Stir-fry pork until the color darkens. 6. Add salt and stir. 7. Add fermented black bean paste, tobanjan and green onions. Turn down the heat. Cook for 3 - 4 minutes. 8. Mix cornstarch, water, and soy sauce together. Add to wok and stir gently. 9.
