Here is how you make Pork Pepper Tomato Simmer:

Empty canned tomatoes into large covered pot and add seasonings (adjust to taste). Start cooking over low/medium heat.Slice up peppers, onion, and mushrooms. Add to large pan over medium/high heat and stir fry until cooked. Add this to large pot with tomato and seasonings. Lower heat on pot to simmer.Dice pork tenderloin into small (1/2 to 1 inch) cubes. Optionally season with some garlic powder. Add to large pan over medium/high heat with 1/2 tbsp of olive oil. Stir fry until fully cooked. Add to large pot.Simmer at least 20 minutes or as long as you would like.Makes four servings with 4 ounces of pork each.
