Remember to salt the water. While water is boiling, core and cut peppers into bite-sized pieces. Strip Thyme from sprigs. Peel and mince garlic or use ready-made minced garlic (add to preference). Chop onion into bite-sized pieces. Once water is boiled, add pasta. While pasta cooks, heat a large skillet/frying pan and cook ground sausage until brown. Make sure you break apart the sausage as you're cooking it, so there are no large pieces. Add peppers, onions, thyme and garlic when sausage is almost cooked. Cook for until veggies are tender-crisp (or to your liking); approx 4-5mins. Add diced tomatoes and season as desired with salt and pepper. Simmer.Once pasta is done, drain the water and set aside until sausage mixture cooked (usually done around the same time, relatively). Cont to simmer sauce for approx 5mins or until it starts to thicken slightly. Once sauce starts to thicken, pour over pasta. and mix together.
