Here is how you make Tomato and Sausage Frittata:

Makes 3 servings.Mix egg, parsley and pepper and set aside. In 10 inch skillet, heat olive oil. Add onions, garlic and green pepper. Stir and cook for 1 minute. Add egg mixture. Lift edges and let uncooked mixture flow underneath until set. Remove from heat. Top with crumbled sausage, tomato slices and cheese. Heat in 350 degree oven for 5 Minutes or until cheese is melted.
