My adaption of Paula Deen's okra and tomatoes. I reduced the oil and fat. Sodium is still pretty high, so sorry about that. This is supposed to have four cups of fresh or frozen okra, but I only had about a cup, so that is all I used. Sugar helps cut the sliminess of the okra, giving you a great side dish. I actually served with couscous and made this a main dish. Some folks also add corn and that is good too.

1 med bell pepper, diced
6 slices center-cut bacon, chopped
1 tbsp Earth Balance buttery spread (or butter, or omit)
1/4 tsp seasoned salt
1/4 tsp garlic powder
1 tbsp chicken base (bouillon) or less, to taste
1 cup water
4 cups diced tomatoes (if you used canned reduce the water)
1 cup sliced Okra (fresh or frozen ok, increase to 4 cups easily without changing any other ingredients)
1 tbsp sugar

Place large skillet over medium heat. Add olive oil.Chop onion and add to pan, cook onion while chopping pepper, add it to the pan. Stir.Chop bacon and add it to the pan. Add butter and stir.Let cook until veggies soften and onion is transluscent.( For me, this took until I was done chopping the other ingredients.)Core and chop tomatoes and slice okra. Add them to the pan and sprinkle the sugar on. Add chicken base, water, seasoned salt, and garlic powder. Bring to boil.Reduce heat to med-low and simmer 30 minutes, stirring occasionally.
