Using a food processor, grind fresh mushroom pieces until they start to stick together in clumps (I aim for the texture of cookie crumbs for pie crust). With clean hands mix mushrooms, onions, turkey and italian seasoning well in a medium bowl. Shape into 18 meatballs (should be about the size of a ping-pong ball). Heat the non-stick skillet and, in two batches, grill/sear the outside of the meatballs to seal in the juices. From here meatballs can be frozen (but remember when you pull them out they're not all the way cooked!) or cooked the rest of the way either in the skillet, in the oven, or boiled in a sauce for immediate use.
