.25 cup ham or pancetta bits
2 tbsp 1% milk
sprinkle of shredded cheese of choice

Here is how you make Egg white veggie and ham frittata with fresh basil:

Saute onions with butter over low heat in a shallow non-stick pan - add a bit of water if they begin to dry out. Add pancetta bits after onions have softened a bit, cook for 1 min. Add zucchini, cook for 1 minute. Add tomatoes - allow veggie mixture to cook for a few minutes, until tomatoes soften and begin to release their juices. While the veggie mixture cooks, prepare eggs - separating ad discarding the egg yokes and reserving the whites. Add a dash of salt and pepper to your taste, and the mixed dried herbs (I used herbs de provence). Beat together with the milk.Pour the egg mixture over the veggies evenly. Be sure the heat is on low - cover the pan! Resist the urge to peak under the lid to see how everything is cooking - the point is the trap the heat inside enough so the top cooks but the bottom doesn't burn! After 5 minutes, remove the pan from the heat (don't remove the cover at any time!!) and let sit for another 4-5 minutes. At this point, remove the cover and jiggle the pan to see if the egg whites on the top are done. If they jiggle when you shake the pan, recover, return to a low heat setting for a few mins and repeat process of removing from the heat and allowing it to sit covered for a few more minutes. (The more you cook this recipe, the better you will get at judging how long it needs according to your pan thickness, stove type... etc..... Just before you are about to serve, sprinkle torn up fresh basil pieces, and recover the pan for a minute.
