Here is how you make Karen's meat and veggie loaf:

Saute onions in pan sprayed with oil, add the rest of the veggies and cover, steaming for a couple of minutes. Place ground beef in a bowl and add egg, soup mix and crumbled bread and catsup. Mix well. Now add all the rest of the veggies. Place in 9x9 baking pan and bake for 1 hour.
