3 T. cooking oil
1 lb. elk steak, thinly sliced
10 oz. sliced mushrooms
1 head bok choi, cut into 1/4" ribbons (about 4 cups sliced)
1 red bell pepper, thinly sliced
1 T. minced fresh ginger
1/4 c. chicken broth or water
3 T. soy sauce
3 T. oyster sauce
12 oz. chinese egg noodles OR fettucine
1 T. sesame oil (optional)
4 scallions, minced


How Do I Make Venison Lo Mein?

Here is how you make Venison Lo Mein:

Bring water to a boil in a large pot.Heat 1 T. oil in large skillet over high heat until just smoking. Add meat and cook, stirring occasionally, until no longer pink, 1-2 minutes. Remove from pan, cover, and keep warm. Heat remaining oil in skillet till hot. Add mushrooms to skillet and cook until browned, about 4 minutes. Add cabbage and bell pepper and cook until cabbage wilts, about 2 minutes. Stir ginger into vegetables and cook until fragrant, about 30 seconds. Stir in broth, soy sauce, and oyster sauce, and bring to a simmer. Remove from heat, cover, and set aside. Cook and drain noodles. Toss with sesame oil (if using), then toss noodles with sauce and veggies. Stir in scallions, season to taste.
