1. Preheat oven to 400.2. Slice zucchini lengthwise. Place skinside down on a baking sheet lightly sprayed with cooking spray. Season lightly with salt. Bake for 15 minutes until tender. Set aside to cool slightly.3. Heat oil in large skillet over medium high heat. Add onions. Cook for 3-4 minutes until they begin to soften.4. Add ground beef, garlic, salt and pepper.
