Grease 3 nine-inch round cake pans; dust with cocoa and line bottom with parchment paper.Sift together dry ingredients in a large bowl. Add oil and vanilla. Mixer on low, blend well. On medium, blend in coffee. When smooth, add vinegar and blend on low.Divide into prepared pans. Bake 20-25 min. until toothipick inserted in center is clean. Remove from oven and cool 15 -20 min on wire rack still in PAN. Remove from pans and cool completely before icing.Icing: Drain water from tofu. Crush tofu and put in med. saucepan with choc chips. Stir over med, heat until chocolate is very soft. Transfer to food processor and puree until fully blended.
