Combine 1/2 C apple cider, apples, cranberries, corn starch, salt, vanilla, and cinnamon in a sauce pan and cook over med-low heat until the cranberries' skins crack.Meanwhile, combine remaining ingredients with a fork until a dough is formed. Divide equally between 8 ramekins and press firmly into the bottom. Spoon the apple mixture on top of each, filling up to the top. Arrange ramekins in a deep-sided baking dish in case of overflow.
