How Do I Make Apple French Toast?

Here is how you make Apple French Toast:

In a skillet, add apples and maple syrup and cook on medium heat till the apples are softened. Remove from heat and cool slightly.Grease an 11 X 13 pan. Pour in the apple mixture spreading evenly. Mix milk and eggs. Dip each bread slice into the mixture and place over apples, squashing bread slightly so they all fit. Pour remaining egg batter over bread. Mix cinnamon and sugar together and sprinkle over casserole, sprinkle with coconut.Bake for 30 to 40 minutes at 350 or until a knife poked in the bread comes out clean.Note, you can make this ahead and cover it and keep in the fridge (without sprinkling on the cinnamon sugar or coconut). About 20 minutes before you want to bake it, uncover and let warm up a little. Sprinkle on the toppings and bake. This means you can make it the night before you serve it.
