Here is how you make Twice-Baked Breakfast Potatoes:

1. Scrub and pierce potatoes; place on a microwave-safe plate. microwave, uncovered on high for 15-17 minutes or until tender, turning once. 2. Meanwhile, in a large skillet, mix sausage crumbles and egg and cook until eggs are done (sausage is pre-cooked so you are just heating up while eggs are cooking).3. Cut potatoes in 1/2 lengthwise, scoop out pulp, leaving a thin shell. IN a large bowl, mash the pulp with the sour cream. Stir in bacon, 1/2c cheese, parsley, salt, pepper and egg/sausage mixture. Spoon into the potato shells.4. Place on baking sheet. Bake uncovered , at 375 degrees for 12-15 minutes.
