6 oz (1 cup) dried apricots
2 tbsp granulated sugar
2 tbsp brown sugar

For the glaze:
2 tbsp granulated sugar
2 tbsp water

Here is how you make Banana and Apricot Chelsea Buns:

1. Lightly grease a 7 inch square pan. Mix the yeast with the flour, salt and spice. Stir in the granulated sugar, rub in the margarine, then add the milk and the egg. Gradually mix in the flour to make a soft dough, adding extra milk if needed.2. Turn out the dough onto a floured surface and knead for 5 minutes, until smooth and elastic. Put the dough in a clean bowl, cover with a damp dish towel and let sit in a warm place for about 2 hours, until doubled in bulk. Or for really good flavor and texture - with any yeast dough - let it rise overnight in the fridge and bring back to room temp before proceeding.3. To prepare the filling, mash the banana in a bowl. Using scissors, snip the apricot into pieces, then stir into the banana with the sugars.4. Knead the dough on a floured surface for 2 minutes, then roll out to 12x9 inch rectangle. Spread the banana filling over the dough and roll up lengthwise like a jelly roll, with the seam underneath.5. Cut the roll into 9 buns. Place, cut side down, in the pan, cover and allow to rise for 30 minutes. 6. Preheat the oven to 400 F and bake for 20-25 minutes. Meanwhile, mix the granulated sugar and water in a small saucepan.
