1/3 cup oil or shortening (I recommend canola or peanut oil)
1/4 cup brown sugar, packed
1/3 cup + 1 Tbsp. Splenda
2 eggs
1 cup or more mashed, overripe bananas (about 3-4 medium)
1 cup chopped dates
1 cup chopped pecans

Here is how you make Anne's Banana Nut Bread (full recipe):

ORIGINAL METHOD: Beat oil and sugars until well blended. Add eggs, continuing to blend. Add flour. Beat well and scrape bowl. Add bananas and dates and mix. Scrape sides of bowl well and fold in nuts.ALTERNATE ("MUFFIN") METHOD: Combine all wet ingredients in one bowl (eggs, oil, bananas.) Sift all dry ingredients except dates & nuts in another bowl. Add wet ingredients to dry ingredients and mix until just combined. Mixture will be lumpy, but no dry patches should remain. Fold in dates and pecans.Bake in greased loaf pan at 350 degrees for 60-70 minutes, or until loaf is golden brown, and knife inserted in middle comes out clean. Cool in pan 20 minutes then turn out onto rack to cool. Best served with cream cheese (Neufschatel works well.)
