1 tsp salt
1/2 tsp baking powder
1 c mashed ripe bananas (about 4 med)
1 c brown sugar (unpacked)
2 lg egg white
5.5 oz fat free vanilla yogurt (or 2/3 c light sour cream)
1capful vanilla


How Do I Make Banana Bread Loaf?

Here is how you make Banana Bread Loaf:

Combine dry ingredients in a bowl and set aside. Mix wet ingredients until thoroughly blended. (I like to use a food processor.) Add wet ingredients to dry ingredients and mix until no flour is visible. If making 24 mini muffins, bake for 12 to 15 minutes or until a toothpick inserted in the center comes out dry. If making one big loaf, bake for 45 minutes at 350 F.Nutrition info is for 15 servings of one loaf.Sometimes I use whole wheat pastry flour instead of oat flour and it turns out great. A substitute for light sour cream can be fat free vanilla or banana yogurt.Recipe makes 24 mini muffins.
