Here is how you make Barb's Healthier Mucho Banana Bread:

1. Preheat oven to 350 degrees F. Spray a 9x5 inch loaf pan with cooking spray (preferably no fat, no calorie).2. In a large mixing bowl, stir together the canola oil and sugar. Add the eggs and vanilla and mix well. Mash 3 of the bananas (if using an electric mixer, just add whole bananas to bowl and let the mixer mash them). In a separate bowl, combine the flour, baking soda, salt and cinnamon; stir into the batter until smooth and blended. Finally, slice the 2 remaining bananas and fold in with the sour cream, and/or walnuts and mini chocolate chips. Spread evenly into the prepared loaf pan. 3. Bake at 350 degrees for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
