I make this into muffins. The orginal recipe was given to me by a Hospital Nutritionist. I tweeked the "fat" and substituted orginal 1 1/2 c. cooking oil with applesauce & buttermilk and 2 T oil. This recipe also makes nice "loaves" of bread or bundt "bread"-ENJOY!!
