1.5 cups whole wheat flour
1.5 tsp baking powder
1/4 tsp baking soda
1/4 tsp ground cinnamon
3 TBS egg whites
1 cup very ripe mashed bananas (~ 3 small/medium bananas)
3/4 cup splenda
1/4 cup unsweetened applesauce
1/8 tsp salt

Here is how you make Better Homes and Garden Banana Bread - Lighter Version:

Use cooking spray to grease the bottom and 1/2 inch up the sides of a loaf pan; set aside.In a medium mixing bowl combine the dry ingredients (flour, baking powder, baking soda, cinnamon and salt). Make a well in the center and set aside.In another bowl combine the egg whites, well mashed bananas, splenda and applesauce, blending well. Add egg mixture all at once to dry mixture and stir just until moistened (batter will be lumpy). Spoon the batter into the prepared loaf pan and bake in a 350 degree oven for 50-55 minutes (make sure to check at 45-50 minutes as that extra 5 minutes could over cook it depending on your oven).Cool in the pan on a wire rack for 10 minutes, remove from pan and allow to cool completely on the rack. Wrap and store overnight before slicing (tastes so much better that way, although I can never pass up at least one small taste of the bread straight from the oven)!Makes 1 loaf - 16 servings.Number of Servings: 16Recipe submitted by SparkPeople user SANDRA_92083.
