Makes 24 muffins or one 9x5 loaf.In a medium bowl combine flour, baking soda & salt. In a different large bowl, cream together butter, brown sugar, eggs, and mashed bananas (2 1/3 cups or about 5-7 medium bananas.) Mix flour mixture with other ingredients, stir enough to moisten.Pour into floured loaf pan or muffin cups. For loaf, bake 60-65 minutes, or until edges are golden-brown.
