1 tsp. seasalt
1 tsp. baking soda
1 tsp. baking powder
1 cup lowfat buttermilk
1 egg
1/2 cup canola oil
1/2 cup honey (I prefer using granulated honey, it's easier to measure and makes less of a mess)
1 tsp cinnamon
1/4 tsp. nutmeg
1 tsp. vanilla
2-3 mashed bananas (mash using a fork or a pastry cutter)
1/2 cup mini chocolate chips (can be substituted with gluten- free chips, nuts, or another grain)

Here is how you make Heather's Banana Chocolate Chip Muffins:

Preheat oven to 400 degrees. Coat a standard 12 cup muffin pan, or 24 cup mini muffin pan with baking spray (such as Pam Baking spray). In a large bowl, mix all dry ingredients together. In a medium bowl, mix wet ingredients together. Add wet ingredients to dry ingredients and mix until combined. Add mashed bananas and mini chocolate chips to the mixture and still until combined. Spoon batter into muffin cups. An ice cream scoop or small measuring cup works well for this. Bake at 400 for 20 minutes. Serve warm.
