4 lg ripe Bananas, mashed and divided
1 C Vegan Chocolate Chips


How Do I Make Vegan Whole Wheat Banana Chocolate Chip Muffins?

Here is how you make Vegan Whole Wheat Banana Chocolate Chip Muffins:

Preheat oven to 350 degrees F.In a bowl, mash 4 large, ripe bananas with a fork. (If the bananas are on the small side, add a 5th.) You will be adding the bananas in two additions.In a bowl combine flour, baking soda, and salt and mix to combine with a whisk or fork.With a mixer in a large bowl, mix the sucanat and oil to combine. Add the water, vanilla, and half the bananas. Mix to combine.In two or three additions, add the dry ingredients to the wet and mix to combine. (It will be a little on the dry side since we've only added half the bananas.)With a large rubber spatula, mix in the rest of the mashed banana and chocolate chips (and any additional add-ins). Adding the bananas in two steps yields a better texture and flavor in the final product.Spoon batter into lined muffin pans.
