1/2t Baking Soda
1/2t Baking Powder
1/8t Salt
5T canola oil
1T melted butter
1T + 1t brown sugar
3/4c evaporated milk, combined with
1 3/4c water
1/2t Cream of Tartar
2 egg whites
1 whole egg
1 very ripe lge mashed banana (try other fruits, like Apricots, very ripe, or even grated vegies steamed)
1/2t gluten-free vanilla
1c gluten free whole Oats
1/4c coarsely chopped walnuts (optional ? or try other nuts or coconut)
4t canola oil ? or use pan spray for each cake


How Do I Make Gluten Free Banana Fry Cakes?

Here is how you make Gluten Free Banana Fry Cakes:

Directions: There's a lot of directions but there's lots of things to do that will make the best cakes.1) In med bowl, sift together flour, soda, baking powder and salt. Set aside. 2) In lge bowl mix together canola oil, butter and sugars. 3) Place the egg whites in a sm to med mixing bowl. Stir Cream of Tartar into the eggs, then whip them with a mixer until making soft peaks when you lift the mixer away. Set aside. 4) To the oil and sugar mixture, add the whole egg, mashed bananas, milk/water and vanilla, stirring until well blended.5) Fold dry ingred. and walnuts (if using) into the liquid mixture til well blended. 6) Stir in the Oats just until they're all in the batter ? There's a reason to add the oats separate from the flour. You don't want the oats to soak up the liquid, you want them dry because they are light enough to help keep the dough from being too heavy and moist. 7) Now fold in the egg whites, very carefully, until they are just barely incorporated. You'll see little bits of the white still if this is done right. 8) If the batter is too thick ? it shouldn't be too easy to pour but also shouldn't be so as to not be able to fall off a spoon fairly easily ? add water a little at a time until it seems right, again stirring carefully.) Stir only enough for the batter to be even, not watery around the edges of the bowl. Set aside for about 20 min. 8) Heat a small fry pan between low and high, closer to high for just a minute or so, then turn it down to midway between the 2, turn down more if cakes are getting too brown before being cooked. 9) If you have a teflon pan, spray in some pan spray. Later if it's not enough to properly cook the cake, you'll need some drops of canola oil. 10) If you're using a non-teflon pan put about 1/2t oil in to start when you turn down the temp on the pan. Be ready to immediately get some batter into the pan before the oil is sizzling. 11) Spoon the batter from a soup spoon into the center of the fry pan, being careful not to disturb the batter too much, you want the little bit of raising to remain. Spoon in just enough batter to make about a 3? round cake. Take a fork and use the tines to gently move some of the dough from the center to the edges ? it's hard to get it cooked in the center. 12) Watch closely and turn the cake when it shows a crop of air bubbles around the edges. DON'T wait for bubbling on top or it will get too black. It can be hard to turn the cake because it will be pretty doughy still. You'll need to use a thin spatula to get under it without messing it up. (makes 1 to 1 1/2doz. 3? cakes)---These are great with just a little butter spread on them.
