How Do I Make Banana Fiber Muffins?

Here is how you make Banana Fiber Muffins:

Heat oven to 400 degrees. Spray bottom of muffin pan with cooking spray or line with paper muffin cups. Mix milk, oil, egg, and mashed banana in medium to large mixing bowl. Add flour, sugar, baking powder, and flax all at once. Mix until just blended (do not overmix, batter will be lumpy). Fill muffin cups 2/3 full. Bake 18-20 minutes until golden brown. Unless using muffin cups leave in pan for 2-3 minutes then transfer to wire rack to cool. If using muffin cups remove from pan immediately.
