1/2 Cup Splenda
1 tsp Baking Soda
1/4 tsp Nutmeg
1 tsp Cinnamon
1/2 tsp Salt
3/4 Cup Buttermilk
1/3 Cup Canola Oil
1 Egg
1 tsp Vanilla Extract
1 Cup Diced or Mashed Bananas
1/2 Cup Chopped Pecans or Walnuts

Here is how you make Banana Health-Nut Muffins!:

Preheat oven to 400 degrees F.Mix the flour, oats, Splenda, baking soda, nutmeg, cinnamon, and salt in a large mixing bowl. Mix the buttermilk, oil, egg, vanilla, and bananas in a separate bowl. Add the wet ingredients and the nuts onto the dry ingredients and mix ONLY until JUST combined. It's okay to have some dry spots here and there. Just don't over mix it! Scoop into lined muffin tins and bake for 18 - 20 minutes. Serving Size:?1 muffin
