*Set oven to 375 degrees F.*Set oven rack to second lowest position.*Spray muffin tin with cooking spray and line with paper liners.*In a medium bowl stir the hot buttermilk together with cereal and let stand for 6 minutes. *Puree the bananas.Transfer bran mixture to a large bowl, add bananas and mix.*Mix sugar together, add to bran/banana mix along with the egg, vanilla, oil and applesauce.
