Here is how you make Banana-Quinoa Muffins, gluten free:

Preheat oven to 400 degrees F. Mix flour and flakes with dry ingredients. In separate bowl mix together bananas, eggs, and honey. Add to dry ingredients and mix thoroughly. Pour into greased muffin tins. Fill each muffin tin 1/2 full. Bake 20-25 minutes. Reduce oven temp for tins with dark finishes. Makes approximately 8 muffins.
