Here is how you make Banana Walnut/Oatmeat Muffins:

Preheat the oven to 400 degrees F.This recipe yields approximately 14 medium sized muffins or 12 large ones.Measure and mix all dry ingredients in a large bowl.  Place the ripe bananas in the bowl of an electric mixer (KitchenAid) and beat at low speed till fairly smooth.  Add the two eggs to just combine and then add the buttermilk. After the milk is combined, add the canola oil and vanilla.Slowly add the dry ingredients till just mixed. Scoop into paper muffin cups placed in muffin pans. Sprinkle with the reserved walnuts and brown sugar on the tops. Bake in the preheated oven for 20 minutes or until a toothpick comes out clean.
