Spray cooking spray on 6 three-inch muffin cups & preheat oven to 350. Stir together oatmeal, SPP, Splenda, baking powder, ginger & nutmeg.Add together the skim milk, cheese, & canola. (I use a 2-cup measuring cup; just put ‘em in together if you have one.)Stir above three slightly & microwave for 2 ½ minutes, or until cheese is melted. During those 2 ½ minutes toss banana into dry ingredients & mash against sides of bowl, blending as much as possible with the dry ingredients.Remove milk/cheese/oil from microwave, stir; pour into the dry ingredients & mix whole batter. Add roughly ¾ walnuts, mix again, & pour batter into prepared muffin cups. Each cup should be nearly full. Use moistened fingertips to “neaten” tops, then sprinkle with more Splenda (or Equal) & remaining walnuts.Bake for 14 minutes, or until a toothpick comes out clean. (14 because you’re not waiting for sugar to melt or egg yolk to cook.)Cool on rack for 15-20 minutes. (For the cheese to recool & bind. That’s the secret.
