Here is how you make Gluten-free Coconut Banana Lime Muffins:

Mix flours, soda, salt and xanthan gum. Set aside. In a separate bowl mix NuNaturals (stevia blend) with 1/2 C sugar and the butter. Add eggs, one at a time. Mix in banana, yogurt, rum, 1/2 C coconut and lime zest. Apportion into muffin cups and sprinkle with more coconut. Bake in 350 degrees F oven, for 12 to 25 minutes, depending on the size of your muffins. Mix 1/4 C sugar with lime juice and heat to dissolve. Remove muffins from oven, allow to cool briefly and remove them from the pans (or not). Brush with the lime juice glaze.
