Brown sugar-- 2 tsps (used for coating at the end)
3 ripe bananas
1 1/4C flour
1 tsp baking soda
1/2 tsp salt
1/4 c olive oil
1 c granulated sugar
1/4 c milled flax seed meal
2 large eggs
1 tsp vanilla extract
1/2 cup chopped walnuts


How Do I Make Jen's Banana Nut muffins?

Here is how you make Jen's Banana Nut muffins:

Mash the bananas. Mix all of the ingredients together except for four and banana mix. Alternate adding bananas and flour until completely blended. Be careful not to overblend. Save some of the walnuts to sprinkle on top. Spoon into muffin pan after spraying with pam or other non-stick spray. I sprinkle some of the walnuts on the top and finish with the coating of brown sugar-- lightly sprinkled. Bake at 350F for 12-15 minutes. Serving Size:?makes 12 larger muffins-- standard muffin pan
