I wanted to make a muffin that my family could have in the morning that was more low-fat and healthy. You can add more bananas in place of the oats if you wish. And If you don't have psyllium husks you can change that to oats or wheat flour. I also make these with frozen mixed berries. If you don't have protein powder you can leave it out and the muffins will turn out just fine. I add it so that the muffins can be a complete snack. 4 Egg whites (or 2 eggs)
1/2 cup Plain low Fat Yogurt
1/4 cup applesauce (unsweetened)
1/2 cup splenda brown sugar blend
1 teaspoon vanilla extract
1/2 teaspoon salt
1 Banana (the recipes called for 3, if you decide to add more banana's subtract some flour or the oats or wheat germ)
1 cup frozen strawberries or mix berries (thawed and mashed)
1/2 cup quick oats (soaked in warm water then drained)
1/4 cup wheat germ
1 1/4 cup whole wheat flour
1/4 cup psyllium
116 grams of Whey Protein (has to be at least 23g protien per 29g of powder)

Here is how you make Low Fat Banana Strawberry Muffins:

Preheat oven to 375 degrees F (190 degrees C) Grease 12 large muffin cups, or line with paper liners. (I line with paper liners then spray with olive oil)In large bowl, whisk together the egg whites, applesauce, yogurt, brown sugar, vanilla. Soak 1/2 cup of the oats in water, drain and mix in to wet ingredients. Combine the flour, wheat germ, pysllium, whey protein powder, spices, baking soda. Stir into the wet mixture.Mash the strawberries up (or you can just slice them into pieces) I mash mine because I like it better this way.Mash up the bananas as well then fold the bananas and berries into the batter. Don't over mix. Spoon batter into muffin cups until completely filled. (I use a 1/3 cup to fill my muffin cups)Topping :mix together 1/4 cup brown sugar (I use splenda blend), 1/4 cup flour, 1 teaspoon of cinnamon, 2 tablespoons butter. Mix into a crumble and sprinkle a little over the muffins before baking for a sweet crunchy muffin top.Bake for 20 to 25 minutes in the preheated oven, or until the tops of the muffins spring back when pressed lightly.
