These are so delicious, and I know that by taking out the oil, substituting something like applesauce, and further reducing the brown sugar would make it healthier, but I think it is a pretty healthy breakfast as is. I get Trader Joe's almond meal, which can be used as a flour as long as it is no more than 1/3 of the total flour needed, so if you don't want the almond meal, use 3/4 cup of each of the unbleached white and whole wheat flours instead. You don't have to add the walnuts or the raisins, either, but mmmmmmmm are they good!! I use the bananas when they are ripe for this recipe.

1 tsp. baking soda
1/2 tsp. salt
1/2 cup chopped nuts (walnuts, or pecans)
1/2 cup currents, or raisins (optional)
1/4 cup flax seed meal (optional, adds fiber)
Separately, beat with a spoon:
1/2 cup oil (canola, or all vegetable, but I have used olive)
3/4 cup brown sugar
1 cup mashed ripe bananas (2-3)
1 egg (or 1/3 cup egg substitute)

Using the above ingredient list, add dry mix to wet mix, folding gently (do not overdue the blending). For a loaf: Turn into a well oiled 9x5x3 loaf pan (or lightly oiled PC stoneware), sprinkle with cinnamon sugar and bake 50 to 70 minutes in 350 oven, depending on your oven and pan. I have taken this out too soon, and the center is still too moist, so if the edges look like they are getting well done, but center not done, cover loosely with foil for another 5 to 10 minutes. Stand on wire rack for 10 minutes, turn out and cool. Or use mini-muffin pans with a light coating of oil spray. and again, sprinkle with cinnamon sugar. Bake at 350 for 20 to 25 minutes.
