Preheat oven to 400 degrees. Mix all ingredients together and put into a muffin pans sprayed with cooking spray. Cook approximately 15 minutes or until a toothpick inserted comes out clean. This makes 36 small muffins (1/4 cup batter) or you can do mini muffins (reduce cooking time) with 1/8 cup batter and have two per serving for a total of 72 mini muffins.
