2 c. rolled (not instant) oats
1/2 c. walnuts, toasted and chopped
1 scoop Pure Protein vanilla cream protein powder
1 tsp. baking powder
2 tsp. ground cinnamon
2 c. milk (I used skim)
1 large egg
1.5 tbsp. unsalted butter, melted
1 tsp. vanilla extract
1 ripe medium bananas, sliced
1.5 c. fresh or frozen berries (I used blueberries)


How Do I Make Baked Blueberry-Banana Oatmeal?

Here is how you make Baked Blueberry-Banana Oatmeal:

Preheat oven to 375F with rack in top third of oven. Spray an 8"x8" baking pan with olive oil or other non-stick spray.In a medium bowl, mix together oats, half the walnuts, protein powder, baking powder and cinnamon. In another medium bowl, whisk together milk, egg, butter and vanilla.Arrange banana slices in a single layer in bottom of prepared baking dish. Sprinkle two-thirds of berries over top. Cover fruit with oat mixture. Slowly drizzle milk mixture over oats. Gently give baking dish a few thwacks on countertop to move milk through oats. Scatter remaining berries and walnuts on top.Bake 35-45 minutes, until top is golden and oats have set. Serve with a drizzle of maple syrup, if desired.Serving Size:?Makes 6 generous servings
