These taste like a fresh out of the oven banana bread-pancake. Next time I may add a handful of chopped walnuts at the end! I cooked mine in a skillet with Tropical Traditions Gold label coconut oil which gave it slight coconut flavor that really added to the overall experience. Instructions:Place skillet on stove on med-high heat with about 1 tsp coconut oil to pre-heatToss all ingredients in your Vitamix or high powered blender (except for coconut oil and toppings)Turn Vitamix on low and gradually move up to high and blend for about 10-30 seconds until smooth.Pour batter into skillet and cook pancakesThis recipe made about 10 medium sized pancakes for me. Next time, I?ll try adding some different ingredients such as hemp seed, walnuts or chia seeds to increase the super-food value! I?m excited to try blueberries as a topping as well.
