The banana is best if it is already turning brown. Otherwise, mash up the banana in a bowl and set aside till it starts to turn color. Whisk ingredients together until a smooth batter forms. Heat griddle at slightly below med heat. The extra 1 tbsp of butter is for cooking. If I lightly butter the pan, I can make 1 tbsp last for cooking all the pancakes.
