*Margarine, 70% vegetable oil spread, 2 tbsp for cooking in four batches of 1/2 tbsp each batch.

Here is how you make Pancakes with Banana, Strawberry and Blueberries:

Sift together the flour, baking powder, baking soda, salt, and cinnamon.In a separate bowl, mix the mashed banana, strawberries and blueberries with the soy milk, oil, vanilla until pretty smooth. Pour the wet ingredients into the dry and mix but do not over-mix. Heat a large non-stick skillet on medium high with 1/2 tablespoon of margarine, and using a 1/4 measuring cup or large spoon, pour 1/4 cup of batter into the skillet in separate areas to make pancakes so not to touch each other. Cook until bubbles appear on the surface and the undersides have turned golden brown, about 2 minutes. With a spatula, carefully turnover "flip" each pancake, cook other side, then remove to a warm small oven on a plate or tray to keep warm while cooking other batches.Repeat with each batch.
