This recipe has a slight cocoa taste due to the teff flour. I adapted it from "Going Wild in the Kitchen" by Leslie Cerier. I added in all purpose flour to thicken the batter a bit. I also added a bit of cocoa but you can play with many aspects of the recipe. Leave out the eggs and you have vegan pancakes. I made one 3" - 4" pancake as one serving so it's easy to take as many as you want and just add an extra serving to your daily tally.

Here is how you make Teff Banana Pancakes:

Put flaxseed in blender and grind until powdered. Add banana, soymilk, vanilla, honey, and 1 tsp of oil.In a separate bowl mix flour, teff, baking soda, and cinnamon.Add banana mixture to dry ingredients and stir until combined.Drop by skant 1/4 cup full onto skillet to form 3 - 4" pancakes.This tastes really great dipped in applesauce or yogurt. You could also make a fruit sauce on the stove with some fruit, juice, sweetener of your choice, and cornstarch.
