These are based on IsaChandra Moskowitz's recipe from Veganomicon. However, I made a LOT of changes and used far less oil, less maple syrup, and way less walnuts than ICM calls for. Before anyone starts complaining that there is no serving size, this is on purpose. I have no way of knowing how many waffles the batter will make in YOUR waffle iron. I have a Cuisinart, you may have something else. So my recommendation is to make up the recipe and then use fractions to establish your serving size (e.g., if you make 8 waffles, the serving size would be 0.125 serving).

1-3/4 C. plain light soy milk
1/4 C water
2 tsp apple cider vinegar
1 Tbs canola oil
2 Tbs maple syrup
1 tsp vanilla extract
2-1/4 C. all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 tsp ground nutmeg

Here is how you make Vegan Banana-Walnut Waffles:

Makes 14-16 wafflesPreheat your waffle iron while making the batter. Pour the soymilk, the water and the apple cider vinegar into a measuring cup and set aside to curdle.Mash the bananas well in a bowl. Add the soy milk mixture, oil, syrup, and vanilla; stir well. (I generally add everything together in my blender and give it a whirl.) Add the flour, baking soda, baking powder, salt and nutmeg to the wet mixture, and use a fork to combine. (Pulse in the blender to just combined.) Fold in the chopped walnuts. (I pulse the walnuts in the Vitamix a few times before starting the recipe, remove and then sprinkle on the waffles before closing the lid.)Spray your waffle iron with spray, add the batter according to your manufacturer's directions (I add 1/2 C. of batter to my Cuisinart --the regular one, not the Belgium waffle one -- and each waffles is actually 4.)Serve with sliced bananas, strawberries, syrup... not included in the calorie count above.Number of Servings: 1Recipe submitted by SparkPeople user ELD2132.
