Drain beans and wash. Slice up tomatoes, peppers and onion. Add peppers and onions to a pan lightly sprayed with olive oil spray. Cook until soft. Add tomatoes, beans, and oregano. Lightly add more cooking spray if needed. Stir occasionally and cover. Cook eggs however preferred. Measure out a 1/2 cup of bean mix and top with an egg. Makes 4, 1/2 cup servings of bean mix.
