Preheat oven to 350. Combine first six ingredients and set aside. In small bowl, whisk together brown sugar, oil, applesauce, egg, egg white, and vanilla and reserved juice. Stir in carrots, pineapple, and grapenuts. Prepare a loaf pan and pour batter in. Bake for 45 minutes or until a toothpick comes out clean.
