How Do I Make Basic Bread?

Here is how you make Basic Bread:

1-Sprinkle the yeast into 1/2 cup of warm milk in a bowl. Leave for 5 minutes; stir to dissolve. Mix the flour and salt in a large bowl. Make a well in the center and pour in the dissolved yeast. 2-Use a wooden spoon to draw enough of the flour into the dissolved yeast to form a soft paste. Cover the bowl with a dish towel and let the paste 'sponge' until frothy, loose, and slightly expanded about 20 min.3-Pour about half of the remaining milk into the center of the well. Mix in the flour from the sides of the well. Stir in the reserved water, as needed, to form a firm, moist dough.4-Turn the dough out onto a lightly floured work surface. Knead until smooth, shiny , and elastic, about 10 min.5-Put the dough in a clean bowl and cover with a plastic grocery bag. Let rise until doubled in size, about 1 1/2-2 hours. Punch down, then let rest for 10 minutes.6-Grease an 8in X 4in X 2 1/2 in loaf pan with oil. Shape the dough for a loaf pan and place the dough in the pan, seam side down. 7-Cover with a dish towel and proof until the dough is 1/2 in below the top of the pan, about 30 minutes.8-If desired, cut a lengthwise slash for a split pan loaf. let the dough rise further until it is 1/2 in above the top of the pan. Preheat the oven to 425 F9-Brush the top with water and bake in the preheated oven for 20 min. Reduce the oven to 400 and bake for 15-20 minutes, until hollow sounding when tapped.
