2 cup Dole Pineapple Chunks in 100% Pineapple juice No Sugar Added
3 large Egg, fresh, whole, raw
.75 cup (not packed) Raisins
.75 cup Quaker Oats Old-Fashioned Rolled Oats
2 cup Flour, white
.75 cup, packed Brown Sugar
2 tbsp *Flax Seed Meal (ground flax)
1 tbsp Chia Seed (Nutiva) 1 Tbsp
1 tsp Salt
3 tsp Baking Powder


How Do I Make Morning Glory Bread?

Here is how you make Morning Glory Bread:

Drain juices of pineapple into small pan I got 3/4 C of juice from the can. Add raisins. Heat on med-low until raisins plump up a bit. Grate carrots; combine with coconut, pineapple, apple sauce, eggs, and raisins when they are done. Mix dry ingredients in large mixing bowl. Add wet ingredients and stir to combine. Add saved pineapple juice a little at a time to get a thick but pourable batter. Spray 9x13. Add batter to pan. Cook at 325 for 30-45 minutes, or until toothpick comes out mostly clean (if toothpick is completely clean, you have over cooked it). Let cool.
