Grease & flour two 8x4 loaf pans. Preheat oven 325.Sift flour, baking powder, salt, soda and cinnamon together.In large bowl beat eggs, oil, sugar, applesauce and vanilla. Add sifted ingredients to creamed mixture. Stir in zucchini until well combined. Pour into prepared pans.Bake 40-60 minutes or until tester inserted near center comes out clean. Cool in pan on wire rack for 20 minutes.
